These dark green, pine needle–shaped leaves carry a comforting aroma of baked rice. Before harvest, the tea bushes are shaded—a technique often used in Japanese green tea—to reduce tannins and enhance sweetness and smoothness. The result is a calm, focused energy and a flavor more nuanced and mellow than typical Chinese greens.
